How Yummy Cookies Monkey Bar

As a child I remember playing school on suspension bars at recess. Was fun, but it does not compare to those monkey bars! The hanger bars are perfect for cookies after school treats with a glass of milk or a cup of hot chocolate. They are perfect for the lunchbox, office addresses, church potlucks, etc. These would also be a good snack to enjoy while watching your favorite team. Make a batch very soon to share with your family and friends.

Bars Suspension

1 / 2 cup raisins
apple juice 1 1 / 2 c. soup
1 cup all-purpose flour
1 / 2 c. baking powder
1 / 2 c. baking soda
1 / 4 c. salt
3 / 4 cup packed brown sugar
1 / 4 cup butter softened
1 / 2 cup mashed ripe bananas
3 c. tablespoons buttermilk low fat
v. vanilla extract 1 tsp
2 large egg whites
1 / 3 cup chopped walnuts
Non-stick cooking spray
1 tsp tablespoon sugar

Preheat oven to 350 degrees.

Combine raisins and apple juice in a bowl microwave. Microwave on high for 1 minute and set aside.

Lightly spoon flour into measuring cup and level with a knife. Mix flour with baking powder, baking soda and salt in a bowl, stirring well with a whisk. flour mixture and set aside.

Combine brown sugar and butter in a large bowl and beat with a mixer at medium speed until well blended. Add bananas, buttermilk, vanilla and egg whites, beating well. Add flour mixture, beating just until blended. Stir in the mixture of raisins and nuts.

Spread the dough in an oven 8 "square pan that has been coated with nonstick cooking spray. Bake at 350 degrees for 30 minutes or until golden brown. Cool bars completely on a rack. Sprinkle with powdered sugar.

Yield: 16 bars at 135 calories, 21 g carbohydrate, 2 g protein, 4.7 g fat
