Can pink pork ribs make you sick?
I cooked ribs indirectly on the grill for 4 hours and the temp varied between 225 and 250. They looked pink but I ate them anyway because I thought they were done. Now My stomach hurts. Do I have ecoli or something or could it be all the fat?
My stomach has hurt before after eating ribs.
First, you need to distinguish if it was raw meat you ate, or a pink smoke ring. I doubt 4 ho urs at 225-250ºF would leave the pork raw.
A smoke ring is a fine thing to see. It means you did well in cooking your bbq low and slow. The smoke + meat causes a chemical reaction that makes a ring of pink around the outer edges of the pork. It should be brown and a cooked color deeper inside, past the smoke ring.
